Bran Date Muffins

These muffins are so good you'll forget they're pretty healthy. Great with coffee at work. After getting all the ingredients, I make a double batch and freeze a bunch.

1 cup Nabisco 100% Bran

1 cup boiling water

1/2 cup margarine

1 1/2 cup sugar

2 eggs

2 cups buttermilk

2 1/2 cups flour

2 1/2 tsp soda

2 cups Kellog's All Bran

1 pkg dates (chopped)

Pour boiling water over 100% Bran in small bowl and set aside to cool. In large bowl, cream butter and sugar. Add eggs and blend well. Stir in buttermilk and cooled bran mix. Add flour and soda and blend well. Fold in All Bran. Add dates. Fill lined muffin pans. bake 15 to 20 minutes @ 400. Batter can be stored, covered, in fridge for up to 3 weeks.
